You need to have this Vegan Parmesan in your life!
You can use it with so many dishes, vegan cheese, mung bean & lentil lasagne, spaghetti bolognese, caeser salad, pizza… the list goes on and on.
The best bit is that it takes all of 2 mins to make and if your short on cashews then sub them for other nuts, if your out of sesame seeds likewise, you can mess around with this recipe it’s quite forgiving, the crucial ingredients here are the nutritional yeast, salt and garlic, the nuts are great too, don’t get me wrong, your best option is most definitely a handful of cashews but they are more for bulk and texture than flavour.
This is one of my favourite vegan discoveries, a lot of great vegan bloggers have created various versions of this so it’s hard to pin point the genius who first came up with this gem of a recipe but for me it’s a big thanks to the fantastic Dana from The Minimalist Baker for introducing me to the world of Vegan Parmesan… oh yeah!
- ¼ cup sesame seeds
- ½ cup raw cashews
- 3 tbsp nutritional yeast
- ½ tsp salt
- ¼ tsp garlic granules
- Whizz everything up in a food processor for 1 minute.
- Keep in an air tight container.
- Done & dusted.
